Ukadiche Modak – Traditional Steamed Modak Recipe
Ingredients
For the outer dough (Ukad)
- 1 cup rice flour
- 1 cup water
- 1 tsp ghee
- A pinch of salt
For the stuffing
- 1 cup grated fresh coconut
- ¾ cup grated jaggery
- ½ tsp cardamom powder
- 1 tbsp poppy seeds (optional)
- 1–2 tbsp chopped nuts (optional: cashews, almonds)
For steaming
- A little ghee (for greasing)
Instructions
1️⃣ Prepare the Coconut–Jaggery Filling
- Heat a pan on medium flame.
- Add the grated jaggery — it will start melting.
- Add the grated coconut and mix well.
- Add cardamom powder and poppy seeds (if using).
- Cook for 3–4 minutes until the mixture thickens slightly.
- Turn off the flame and let it cool.
2️⃣ Prepare the Rice Dough (Ukad)
- Boil 1 cup of water with a pinch of salt and 1 tsp ghee.
- Once it boils, reduce flame and add rice flour.
- Mix quickly to form a dough.
- Cover and cook for 1 minute.
- Transfer to a plate and knead while warm until smooth and soft.
Tip: If the dough cracks, sprinkle a little warm water and knead again.
3️⃣ Shape the Modak
- Grease your palms with ghee.
- Take a small ball of dough and flatten it into a cup shape.
- Add 1–2 teaspoons of coconut filling.
- Gently bring the edges together and pinch to form the classic modak shape.
4️⃣ Steam the Modaks
- Grease a steamer plate with ghee.
- Place the modaks and steam for 10–12 minutes.
- Modaks will turn slightly glossy when cooked.
Serve
Drizzle a little ghee on top and serve warm.
